Lately Loving: The Big Salad

I've often thought that if Elaine Benes were an actual person, not a fictional TV character, she and I would be BFF's. We'd get together for a girls' outing, swap crazy boss stories, try out new dance moves, and rate the spongeworthiness of our male prospects—all as we dined on our Big Salads. Indeed, hardly a day goes by when I don't eat exactly that for lunch.

My Big Salad rut has developed almost by accident. I never set out to make a huge pile of greens and veggies; however it's as though I'm physically incapable of preparing anything but. I chop a little of this, toss in a little of that, and before you know it, I'm past the point at which I can't fit it on a single plate. In other words, I need to set clearer boundaries in the kitchen.

Or do I? After all, there are worse things that I could be eating by the bushel. A hefty daily helping of cabbage and kale, peppers and carrots, sprouts and spinach makes my tummy happy and prevents wilted produce from taking up residence in the crisper. Plus I keep life interesting by regularly trying new vinaigrette recipes (my current fave is Pinch of Yum's almond honey mustard dressing). It's a habit of which Elaine would heartily approve.
