Summer Recipes for Last-Minute 4th of July Food

Raise your hand if you're feeding a crowd this weekend! Whether you're hosting a 4th of July bash or contributing to a potluck, these three easy and delicious recipes from my archives are perfect for all your last-minute 4th of July food emergencies! If you're that person (like me!) who always ensures there's a veggie option on the table, this raw summer salad will fit the bill. It makes the most of summer's bounty and includes a killer basil shallot vinaigrette that might become your go-to dressing!

Green juice cocktail

In the drinks cooler, soda and beer promise refreshment; but the nutrients in a green juice cocktail will offset all those chips and potato salad you plan to load on your plate! Make the juice ahead of time using your favorite produce blend—I included ripe pear in mine for a touch of sweetness that complements the greens—then keep a bottle of it on ice as an alternative to store-bought mixers. Love a time-saver that's healthy too!  

Grilled s'mores sandwich

Finally, don't forget dessert! Elevate an American classic with grilled s'mores sandwiches. The best thing about these is that you don't need a campfire to savor that nostalgic s'mores flavor. A pan on the stove or the barbecue grate will do just fine! Just be sure to buy extra ingredients, because these babies are super popular at parties…even if the party is just for one.
