While I’m a picky eater in some regards, I’m happy to say that I never met a vegetable I couldn’t love. Brussels sprouts? Bring ’em on. Mushrooms? The slimier the better. And as for kale, well, let’s just say that my love affair with the leafy green wonder knows no bounds. But even as a diehard kale fan I’m the first to admit that the same old methods of preparation can get a little tired. That’s why I’m always on the hunt for new ways to incorporate kale and other healthy veggies into my cooking. And it’s why I’m so excited about this recipe for a creamy vegan salad dressing that consists of only three ingredients—yet also features eight varieties of fresh produce!
Those of you who are better at math than I am are probably questioning my numbers right about now, but I promise I haven’t forgotten how to count! The trick is to make this dressing recipe using green juice—the new Kale Blazer from Naked Juice to be exact. With a lip-smacking blend of kale, cucumber, spinach, celery, oranges, apple, ginger, and lemon, Kale Blazer packs a serious nutrient punch, yet has a mild, slightly sweet flavor that brings out only the best in kale and its fibrous companions.
The second major ingredient in this clean-eating game-changer is raw cashews. A good soak in water softens the nuts for blending with the juice, and the result is a smooth dressing with an indulgently smooth texture and a rich but delicate flavor that complements whatever salad combo your tastebuds desire! I myself love a mix of spring greens, shredded carrots, and peppers for crunch, plus plenty of interesting add-ons like grapes, sprouts, sunflower seeds, and roasted chickpeas. I keep ’em all on hand for quick, healthy meals that I can throw together in a pinch. And with my fab new Kale Blazer dressing, meeting my daily greens goals just got even easier!
Creamy Kale Vegan Salad Dressing
3/4 cup raw cashews
1/2 bottle Kale Blazer juice (use the handy Naked Juice product locator to find out where to buy Kale Blazer!)
1/2 tsp salt, or to taste
Place the cashews in a bowl and cover them with water. Soak at least 4 hours but preferably overnight. Drain, rinse, and place in a blender with Kale Blazer juice and salt. Whirl it all up, adding more juice if you prefer a thinner consistency. Pour over your favorite salad combo! Makes about 1 cup, so you’ll have plenty to store in the fridge and enjoy all week!
