Raw Summer Salad Recipe

Healthy eating is a big area of interest for me, and I love sharing my favorite recipes with you guys. However, I’m also a creature of habit, so things would get pretty boring if I posted the same three meals I eat over and over again. That’s why I’m super excited to be partnering with Lacy Young to share some of her original recipes! Lacy is an amazing health coach. I’ve worked with her on my own nutrition goals in the past, and she’s exactly the person to inject some much-needed variety to the menu!

First up is this raw summer salad recipe with a basil shallot vinaigrette. Lacy created it to take advantage of the season’s bounty of fresh produce. Enjoying veggies raw really is the way to go this time of year. They not only deliver your full complement of nutrients, they’re also crisp and refreshing to keep you feeling light and energetic when the temperatures rise. Plus you don’t have to turn on the stove!

This is one of those unassuming recipes whose simplicity belies how incredibly delicious it is. The combination of flavors, textures, and colors will blow your mind! Fix a big batch and use it as a side when you barbecue, toss it with greens as the main event, or bring it to your next picnic and let the accolades come rushing in. Bonus? The dressing recipe makes extra and trust me: you’re going to want to put it on everything!

Raw Summer Salad Recipe with Basil Challot Vinaigrette

For the Basil Shallot Vinaigrette 

1 cup fresh basil leaves

3/4 cup extra virgin olive oil
1/4 cup white wine vinegar
2 tbsp maple syrup (or honey)
1 tsp spicy mustard

1/2 large shallot
1/2 tsp salt
pepper to taste

For the Salad

2 ears corn, kernels cut off cob
1 cucumber, thinly sliced
1 cup grape tomatoes, halved 

1/2 red onion, minced

1/2 avocado, diced

Make the dressing by placing all ingredients in a blender or food processor and pureeing until smooth. Toss veggies in a bowl with the dressing, add pepper to taste, and serve.
