Healthy Cookbooks for the Spring Kitchen

On the whole I'm a pretty healthy eater. I make most of my meals at home, avoid processed junk, and never met a veggie I couldn't love. My biggest obstacle to eating well 100% of the time? The lack of variety! I get into a routine, put the same handful of meals on repeat, and before you know it I'm craving the crunch of tortilla chips or the melty sweetness of ice cream. I find the trick to keeping those cravings at bay is to keep my tastebuds guessing within my clean plate guidelines.

So I'm loving this spring's crop of new healthy cookbooks! Though I admittedly get most of my recipes from Pinterest these days, simply taking one of these gems down from the shelf and browsing through it with a cup of herbal tea inspires me to plan fresh menus, sample unusual ingredients, and hit the farmers market for the season's freshest produce. And while feeling good is certainly the #1 reason to eat well, let's not forget that bathing suit season is just around the corner!

  1. If I’m craving ice cream, I blend 3 bananas in a blender until they’re incredibly smooth — like ice cream. I also add either a few drops of vanilla or some vegan cocoa powder. Amazing how it tastes like ice cream, but none of the sugar or other things that are unhealthy.
