There’s no doubt that Christmas dinner is fantastic. The turkey, the stuffing, the gravy…you won’t catch me turning down seconds. But the holiday meal that really makes my heart race is Christmas breakfast. Nothing beats sating a hard-earned appetite while surrounded by the fruits of your labor—and by that I of course mean piles of shredded wrapping paper and mountains of shiny new toys! Traditionally my family goes the pancakes route, but I’m thinking this year I might mix it up with one of these alternative Christmas breakfast recipes.
The gingerbread paleo waffles recipe I developed last year has stood the test of time and remains a crowd pleaser. It’s grain free and low in sugar, so it won’t weigh you down for that post-breakfast walk through the neighborhood. Also, don’t forget that January 1 is speeding towards us, which means we only have a little over a week to meet our yearly quotient of delicious gingerbread flavor!
Adrianna of A Cozy Kitchen literally wrote the book on pancakes, so you’d expect her site to have a plethora of breakfast options. This almond dutch baby recipe comes together in a flash and makes a brilliant presentation at the table. Top it with jam, sauteed apples, caramelized bananas…or just rip it apart plain and stuff it in your mouth while it’s still puffy and hot. Fork and knife optional.
French toast is always a good breakfast option, but pumpkin bread French toast? Lindsay from A Pinch of Yum is seriously onto something here! Not only does her recipe put a wintry twist on the classic, but it gives you an excuse to prep the pumpkin bread today. After all, French toast tastes best with stale bread, and you’d probably be advised to sample it in advance. A lot of samples. Double batch samples, in fact.
Dolly and Oatmeal is one of my favorite healthy baking blogs, and this recipe for cranberry, lemon, and poppyseed breakfast cake exemplifies why. It’s simple, it’s wholesome, it’s flavorful, it’s versatile, and it’s foolproof! Whip up the batter while the coffee percolates, then pop it into the oven and let the sweet aroma fill the air as the kids open their stockings. Plus you can use any leftovers to make Lindsay’s French toast recipe on Boxing Day!
But knowing my family and traditions, I’d better make sure there are pancakes on the table in addition to any other treats I provide. Otherwise they might steal back my presents and replace them with coal! My own gluten free pancakes recipe never fails to deliver light and fluffy flapjacks and contains only a few healthy ingredients. And hey, there’s nothing in the rule books that says I can’t serve pancakes alongside some of these other recipes. It is Christmas, after all!
